- 4 boneless, skinless chicken breasts
- 3 zucchinis, sliced
- 1 cup cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, oregano, and thyme.
- In a large oven-safe skillet, heat olive oil over medium heat and sear chicken for 3-4 minutes per side until golden.
- Add sliced zucchinis and cherry tomatoes around the chicken in the skillet.
- Mince garlic and sprinkle over the vegetables and chicken.
- Transfer skillet to the oven and bake uncovered for 20-25 minutes until chicken is cooked through and vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add Kalamata olives or feta cheese for extra flavor.
- This dish pairs well with a side of quinoa or couscous.
