- 4 cups diced potatoes or hash browns
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/2 cup cooked bacon bits (optional)
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Prepare a baking dish and gather all ingredients. If using fresh potatoes, dice them into small, even pieces. Sauté onions in olive oil until translucent.
- In a large bowl, combine diced potatoes, sliced sausage, ranch seasoning, sour cream, cooked onions, and bacon bits. Mix until evenly coated. Adjust salt and pepper to taste.
- Transfer the mixture into a greased baking dish. Top with shredded cheddar cheese and optionally garnish with fresh parsley.
- Bake for 25-30 minutes until cheese is melted and bubbly. For a crispy top, broil for an additional 2-3 minutes.
Notes
- You can use frozen hash browns or fresh diced potatoes. If using fresh potatoes, parboil before baking.
- For a leaner version, substitute smoked sausage with chicken or turkey sausage, or use plant-based alternatives.
- Add your favorite vegetables for variety, or spice it up with hot sauce.
