- 3 ripe bananas, mashed
- 1 cup Greek yogurt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped nuts or dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine mashed bananas, Greek yogurt, eggs, honey, and vanilla. Whisk until smooth.
- In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, and salt. Gradually add to wet ingredients, stirring gently until just combined.
- Fold in nuts or chocolate chips if desired.
- Pour batter into prepared loaf pan. Bake for 50-60 minutes, or until a toothpick comes out clean. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

- Store leftovers in an airtight container at room temperature for up to 2 days.
- Refrigerate for up to a week or freeze slices for up to 3 months.
