- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup freshly grated lemon zest
- 2/3 cup freshly squeezed lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the flour and salt, mixing until just combined. Press this dough evenly into the bottom of a lightly greased 9×13-inch baking dish. Bake for 15-20 minutes or until lightly golden.
- While the crust bakes, whisk together the eggs, sugar, flour, and lemon zest in a bowl. Add the lemon juice and whisk until smooth. Once the crust is baked, pour the lemon filling over it.
- Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm around the edges. Remove from the oven and let cool completely. Dust with powdered sugar before slicing into bars.
Notes
- Use freshly grated lemon zest for maximum citrus flavor.
- Do not overbake; the filling should be slightly jiggly in the center when done.
