Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the flour and salt, mixing until just combined. Press this dough evenly into the bottom of a lightly greased 9×13-inch baking dish. Bake for 15-20 minutes or until lightly golden.
  2. While the crust bakes, whisk together the eggs, sugar, flour, and lemon zest in a bowl. Add the lemon juice and whisk until smooth. Once the crust is baked, pour the lemon filling over it.
  3. Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm around the edges. Remove from the oven and let cool completely. Dust with powdered sugar before slicing into bars.
