Instructions

  1. In a small bowl, combine 1/4 cup sugar with 2 teaspoons ground cinnamon. Set aside for the cinnamon swirl.
  2. Preheat your oven to 350°F (175°C). Mash bananas in a large bowl until smooth. Add softened butter, sugar, eggs, and vanilla extract. Whisk until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture into the wet ingredients, stirring gently until just combined.
  4. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Repeat with remaining batter and cinnamon sugar, creating a marbled effect.
  5. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
