Ingredients
Scale
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- For the cinnamon swirl:
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- In a small bowl, combine 1/4 cup sugar with 2 teaspoons ground cinnamon. Set aside for the cinnamon swirl.
- Preheat your oven to 350°F (175°C). Mash bananas in a large bowl until smooth. Add softened butter, sugar, eggs, and vanilla extract. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture into the wet ingredients, stirring gently until just combined.
- Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Repeat with remaining batter and cinnamon sugar, creating a marbled effect.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
