Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
- Stir in the orzo and cook for 2 minutes, coating it with oil.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 10 minutes.
- Add cherry tomatoes and spinach, cooking for another 2-3 minutes until vegetables are soft.
- Stir in Parmesan cheese, season with salt and pepper, and serve hot.
