  • 4 large potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing or ranch seasoning mix
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp paprika (optional for extra flavor)
  • Fresh parsley for garnish

Instructions

  1. Wash and dice the potatoes into uniform pieces. Slice the smoked sausage into bite-sized pieces. Dice the onion and mince the garlic.

  4. Toss diced potatoes with olive oil, black pepper, paprika, and salt. Spread on a baking sheet, roast at 400°F (200°C) for 20-25 minutes until crispy.
  5. Mix roasted potatoes with sausage, onion, and ranch dressing or seasoning. Gently combine.
  6. Transfer mixture into a baking dish, sprinkle shredded cheddar cheese on top.
  7. Bake at 375°F (190°C) for 10-15 minutes until cheese is melted and bubbly.

Notes

  • You can substitute chicken sausage for a lighter version.
  • For low-carb, replace potatoes with cauliflower florets.
  • Adapt baking times if using different oven types or larger quantities.
  • Garnish with chopped parsley or scallions for added freshness.
