- 1 lb smoked sausage, sliced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Gather all ingredients and prep by slicing sausage, dicing potatoes, chopping onion, and mincing garlic.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sausage and cook until browned (about 3-4 minutes). Add onion and garlic, cook until fragrant. Remove from heat.
- Cook potatoes in boiling water until tender, about 10 minutes. Drain well.
- Preheat oven to 375°F (190°C). In a large bowl, combine potatoes, sausage mixture, ranch dressing, and half of the cheese. Mix thoroughly.
- Transfer mixture into a greased baking dish. Top with remaining cheese and sprinkle with paprika.
- Bake uncovered for 20-25 minutes, until bubbly and golden.
- Garnish with chopped parsley. Serve hot with salad or bread.

- Use fresh potatoes for best texture; frozen or pre-cooked are acceptable in a pinch.
- Adjust ranch seasoning as desired—add herbs/spices for extra flavor.
