  • Total Time: 40 mins
  • Yield: 6 servings

Ingredients

Scale
  • 1 lb smoked sausage, sliced
  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all ingredients and prep by slicing sausage, dicing potatoes, chopping onion, and mincing garlic.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sausage and cook until browned (about 3-4 minutes). Add onion and garlic, cook until fragrant. Remove from heat.
  3. Cook potatoes in boiling water until tender, about 10 minutes. Drain well.
  4. Preheat oven to 375°F (190°C). In a large bowl, combine potatoes, sausage mixture, ranch dressing, and half of the cheese. Mix thoroughly.
  5. Transfer mixture into a greased baking dish. Top with remaining cheese and sprinkle with paprika.
  6. Bake uncovered for 20-25 minutes, until bubbly and golden.
  7. Garnish with chopped parsley. Serve hot with salad or bread.

Notes

  • Use fresh potatoes for best texture; frozen or pre-cooked are acceptable in a pinch.
  • Adjust ranch seasoning as desired—add herbs/spices for extra flavor.
  • Broil for 2-3 minutes for a crispy topping.
