Instructions
- Season the chicken breasts generously with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Add chopped spinach and sauté until wilted. Pour in heavy cream, stirring to combine. Stir in grated Parmesan cheese, and season with salt and pepper. Let simmer until the sauce thickens, about 3-5 minutes.
- Return the cooked chicken to the skillet, spoon sauce over, and heat through for 2-3 minutes. Optionally, add lemon zest or a squeeze of lemon juice. Serve hot with garlic bread or pasta.
