Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and slice the sweet potatoes into 1/4-inch rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes until golden and crispy.
- Remove from oven, top each round with crumbled feta cheese and a drizzle of honey.
- Garnish with fresh herbs if desired, serve warm or at room temperature.
Notes
- For extra flavor, add a pinch of paprika or cinnamon before baking.
