- 2 large sweet potatoes, peeled and sliced
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly oil a baking dish.
- Layer sliced sweet potatoes in the dish and drizzle with olive oil. Season with salt and pepper.
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic, cook until translucent.
- Add ground turkey, paprika, cumin, salt, and pepper. Cook until browned and cooked through.
- Spread cooked turkey mixture over the sweet potatoes.
- Bake for 25-30 minutes until sweet potatoes are tender and top is crispy.
- Garnish with chopped parsley and serve hot.
Notes
- Feel free to add cheese or a sprinkle of crushed red pepper for extra flavor.
- You can prepare the dish a day ahead and reheat.
