  • 1 onion, diced

  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly oil a baking dish.
  2. Layer sliced sweet potatoes in the dish and drizzle with olive oil. Season with salt and pepper.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, cook until translucent.
  4. Add ground turkey, paprika, cumin, salt, and pepper. Cook until browned and cooked through.
  5. Spread cooked turkey mixture over the sweet potatoes.
  6. Bake for 25-30 minutes until sweet potatoes are tender and top is crispy.
  7. Garnish with chopped parsley and serve hot.
