- 3 lbs boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup honey or brown sugar
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon crushed red pepper flakes
- 1 cup chopped pineapple chunks
- Green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Place chicken in the crockpot.
- In a bowl, whisk together pineapple juice, soy sauce, honey, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
- Shred the chicken with two forks and stir in chopped pineapple.
- Serve hot, garnished with sliced green onions and sesame seeds if desired.

- Adjust sweetness by adding more honey or brown sugar.
- Best served over rice or steamed vegetables.
- Store leftovers in an airtight container for up to 3 days.
