Instructions
- In a small bowl, mix honey, lime juice, soy sauce, lime zest, olive oil, salt, and pepper to create the marinade.
- Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
- Grill the chicken until cooked through and slightly charred, about 6-7 minutes per side.
- While the chicken grills, prepare the rice and slice the avocados.
- Assemble the dish by stacking rice, then avocado slices, and sliced grilled chicken on top.
- Garnish with fresh cilantro and lime wedges before serving.
Notes
- You can substitute chicken thighs for breasts for extra juiciness.
- For a vegan version, use grilled tofu and maple syrup instead of honey.
