Ingredients

  • 250g graham crackers or digestives, crushed
  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 200g Greek yogurt or sour cream
  • 150g caster sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 250g fresh strawberries, hulled and sliced
  • 2 tablespoons strawberry jam or syrup (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 180°C (350°F). Combine crushed graham crackers with melted butter and press into a springform pan. Bake for 8-10 minutes until golden. Cool completely.
  2. Beat the cream cheese until smooth. Mix in caster sugar. Add eggs one at a time, then vanilla and lemon juice. Fold in Greek yogurt until smooth.
  3. Gently fold two-thirds of the sliced strawberries into the filling. Pour onto the cooled crust and smooth the top. Arrange remaining strawberries on top.
  4. Bake for 50-60 minutes until edges are set but center slightly jiggles. Turn off oven, leave door ajar for 1 hour. Refrigerate for at least 4 hours or overnight.
