- 12 oz. of spaghetti (or your favorite pasta) via our pasta tag
- 2 cups cooked chicken, shredded via our chicken tag
- 1 can (10 oz.) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes.
- Stir in smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper. Cook for 1 minute to toast the spices. Add the diced tomatoes with green chilies, stirring to combine. Let the mixture simmer for 5 minutes to enhance flavors.
- Add the shredded cooked chicken to the skillet. Mix well. Then, fold in the cooked pasta, ensuring everything is coated with the spice mixture.
- Reduce heat to low. Stir in sour cream and shredded cheddar cheese until melted and creamy. Taste and adjust seasoning as needed.
- Transfer to serving bowls or a casserole dish. Garnish with chopped parsley. Serve hot and enjoy.
Notes
- Adjust the cayenne pepper to control the spice level according to your preference.
- For a creamier texture, substitute sour cream with Greek yogurt or cream cheese.
