  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 12 oz. of spaghetti (or your favorite pasta) via our pasta tag
  • 2 cups cooked chicken, shredded via our chicken tag
  • 1 can (10 oz.) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper. Cook for 1 minute to toast the spices. Add the diced tomatoes with green chilies, stirring to combine. Let the mixture simmer for 5 minutes to enhance flavors.
  4. Add the shredded cooked chicken to the skillet. Mix well. Then, fold in the cooked pasta, ensuring everything is coated with the spice mixture.
  5. Reduce heat to low. Stir in sour cream and shredded cheddar cheese until melted and creamy. Taste and adjust seasoning as needed.
  6. Transfer to serving bowls or a casserole dish. Garnish with chopped parsley. Serve hot and enjoy.

Notes

  • Adjust the cayenne pepper to control the spice level according to your preference.
  • For a creamier texture, substitute sour cream with Greek yogurt or cream cheese.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in microwave or skillet.
