- 2 pounds boneless, skinless chicken breasts, sliced
- 3 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces pasta (penne or linguine)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Season chicken slices with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add bell peppers, onion, and garlic. Sauté until vegetables are tender.
- Pour in heavy cream and chicken broth, stirring well. Bring to a simmer and cook until slightly thickened.
- Return chicken to the skillet and stir to coat in sauce. Cook for an additional 2-3 minutes.
- Add cooked pasta to the skillet, toss to combine, and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.

- Serve with a side of crusty bread or a fresh salad.
