- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, chopped (optional)

- Fresh lettuce, tomato, and pickles for serving (optional)

Instructions
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Stir in seasoning and cook for 1 more minute. Set aside.
- Lay a tortilla flat on a surface. Spread cooked ground beef over half of it. Top with shredded cheeses and optional toppings like diced onions or jalapeños.
- Fold the tortilla in half. Heat a nonstick skillet over medium heat. Cook the folded quesadilla for 2-3 minutes until golden. Flip and cook the other side for an additional 2-3 minutes until crispy.
- Slice into wedges and serve immediately with fresh toppings such as lettuce, tomato, and sour cream or salsa.
