Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Place seared roast in the slow cooker. Add sliced onion, garlic, carrots, potatoes, and herbs.
- Pour beef broth over the ingredients.
- Cover and cook on low for 8-10 hours or until the beef is tender.
- Remove the roast and vegetables, serve hot garnished with fresh herbs.

- You can add other vegetables like celery or parsnips for variety.
- For extra flavor, marinate the beef overnight with herbs and spices before cooking.
