Ingredients

- 2 cups cooked shredded chicken
- 4 cups fresh or frozen corn kernels
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Place all ingredients except cream and garnish into the slow cooker.
- Cook on low for 6-8 hours until flavors meld and chicken is tender.
- Stir in heavy cream during the last 30 minutes of cooking.
- Serve hot garnished with fresh parsley.
Notes
- For a smoky flavor, add a pinch of smoked paprika.
- Use fresh corn for the best flavor or frozen if out of season.
