- 2 lbs boneless, skinless chicken breasts or thighs
- 4 cups fresh or frozen corn kernels
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken, corn, onion, garlic, thyme, salt, and pepper into the slow cooker.
- Pour in chicken broth and cook on low for 6-8 hours or high for 4 hours.
- Remove chicken, shred it, and return to the crockpot.
- Stir in milk or cream and butter, cook for 30 minutes more until heated through.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, add chopped bacon or a dash of smoked paprika. Can substitute heavy cream with coconut milk for dairy-free option.
