- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped cucumber
- 1 avocado, diced
- 2 tablespoons lime juice
- 1 teaspoon hot sauce (optional)
- Salt and pepper to taste
- Lime wedges and extra cilantro for garnish
Instructions
- In a large bowl, combine the tomato juice, lime juice, hot sauce, salt, and pepper. Mix well.
- Add cooked shrimp, chopped onion, cilantro, and cucumber. Toss gently to combine.
- Gently fold in diced avocado.
- Chill for 30 minutes before serving.
- Serve in individual glasses or bowls topped with additional cilantro and lime wedges for garnish.
