- 3 red bell peppers
- 2 yellow bell peppers

Instructions
- Preheat your oven to 400°F (200°C). Roast the red and yellow peppers until charred, about 20 minutes. Peel and deseed them, then blend until smooth.
- Season the tilapia fillets with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook the fillets for 3-4 minutes per side until golden and cooked through.
- Pour the roasted pepper sauce over the cooked tilapia and garnish with chopped parsley.
Notes
- You can substitute tilapia with other white fish like cod or haddock.
- For extra spice, add a pinch of cayenne pepper to the sauce.
