Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cream of tartar, and salt.
- In a separate large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add flour mixture, mixing until just combined. Fold in chopped apples.
- Shape dough into 1-inch balls and roll in cinnamon sugar. Place on prepared baking sheets about 2 inches apart.
- Bake for 10-12 minutes until golden around the edges.
- Allow cookies to cool slightly before transferring to a wire rack.
