- For coating: 1/4 cup granulated sugar and 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla; beat well.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fold in chopped apples.
- In a small bowl, combine sugar and cinnamon for coating.
- Form dough into 1-inch balls, roll in cinnamon sugar mixture, and place on prepared baking sheets.
- Bake for 10-12 minutes or until edges are golden brown.
- Cool on wire racks before serving.
Notes
- Replace fresh apples with dried apple pieces for a different texture.
- Store cookies in an airtight container for up to 3 days.
