Instructions
- Combine sliced peaches, sugar, lemon juice, and vanilla extract in a bowl. Toss well and add cornstarch if desired. Set aside to meld flavors.
- Lightly flour your work surface and roll out the puff pastry sheet to smooth out creases. Cut into 4-6 squares depending on desired size.
- Add a spoonful of peach filling in the center of each square. Fold the corners toward the center and gently pinch to seal, or roll up for a traditional cruffin shape.
- Preheat oven to 375°F (190°C). Place cruffins on a parchment-lined baking sheet. Brush tops with beaten egg and sprinkle with coarse sugar if desired. Bake for 20-25 minutes until golden and crispy.
- Remove from oven, let cool slightly. Optionally drizzle with honey or glaze made from powdered sugar and milk. Store in an airtight container for up to 1 day at room temperature, or refrigerate for up to 3 days. Reheat for optimal crispiness.
