Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- In a bowl, combine diced apples, sugar, cinnamon, nutmeg, and lemon juice.
- Cut pastry into circles slightly larger than muffin cup openings.
- Press pastry circles into muffin cups, filling with apple mixture.
- Brush edges with beaten egg and top with more pastry if desired.
- Sprinkle with cinnamon sugar, then bake for 20-25 minutes until golden.
- Allow cooling slightly before removing from muffin tin.

- Use tart apples like Granny Smith for a balanced sweetness.
- Can be served with whipped cream or vanilla ice cream.
