- 4 boneless skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced

- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear chicken until golden on both sides.
- Place seared chicken in the slow cooker.
- In a bowl, combine lemon juice, garlic, thyme, rosemary, and chicken broth.
- Pour mixture over chicken in the slow cooker.
- Cover and cook on low for 6 hours.
- About 20 minutes before serving, add rice to the slow cooker and stir to combine.
- Cook until rice is tender and liquid is absorbed.
- Garnish with fresh parsley and serve hot.

- For a zestier flavor, add lemon zest to the cooking liquid.
- Use brown rice for a healthier alternative, adjusting cooking time accordingly.
