Instructions
- In a large bowl, mash the ripe bananas until smooth. Add the honey, melted butter, eggs, and vanilla extract. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate these into the wet mixture, folding gently to keep the batter light.
- Grease a loaf pan with butter or nonstick spray. Line with parchment paper if desired.
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake at 350°F (175°C) for 60-70 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
