- 3 ripe bananas, mashed
- 1/2 cup honey (preferably organic)
- 3 large eggs
- 1/2 cup melted unsalted butter or coconut oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or line it with parchment paper.
- In a large bowl, mash bananas until smooth. Add honey, eggs, melted butter, and vanilla extract. Whisk until well blended.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Fold in optional chopped nuts or chocolate chips, if desired.
- Pour batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, add a teaspoon of cinnamon or nutmeg to the dry ingredients.
- Store leftovers in an airtight container at room temperature for 2-3 days, or freeze for up to 3 months.
- To enjoy later, thaw at room temperature or warm slices briefly in the microwave.
