  • 1/2 cup honey (preferably organic)
  • 3 large eggs
  • 1/2 cup melted unsalted butter or coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or line it with parchment paper.
  2. In a large bowl, mash bananas until smooth. Add honey, eggs, melted butter, and vanilla extract. Whisk until well blended.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  4. Fold in optional chopped nuts or chocolate chips, if desired.
  5. Pour batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
