- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- In a skillet, brown the ground beef with diced onion and minced garlic until fully cooked. Drain excess fat.
- Add the cooked beef mixture to the crockpot along with crushed tomatoes, broth, Italian seasoning, and red pepper flakes.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, add broken lasagna noodles and stir to combine.
- Once noodles are tender, sprinkle shredded mozzarella and Parmesan cheese on top and cover until cheese melts.
- Garnish with fresh basil before serving. Enjoy your hearty lasagna soup!

- You can substitute ground chicken or turkey for beef for a lighter version.
