- 2 pounds beef stew meat, cubed
- 4 large carrots, sliced
- 4 potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Place beef stew meat in the slow cooker and season with salt and pepper.
- Add carrots, potatoes, onion, and garlic on top.
- Stir in beef broth, tomato paste, thyme, and rosemary.
- Cook on low for 6-8 hours or on high for 3-4 hours until beef is tender and vegetables are cooked.
- Adjust seasoning as needed and serve hot.
Notes
- You can add peas or green beans into the stew during the last 30 minutes of cooking for extra flavor.
- For a thicker broth, mix a tablespoon of flour with water and stir into the stew before serving.
