Ingredients

Scale
  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 cup white or brown rice
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small red onion, diced
  • 1 tsp dried oregano
  • 1 tsp ground cumin

  • Lemon wedges (optional, for serving)

Instructions

  1. Start by cooking your rice according to package instructions. Add a pinch of salt or lemon juice for flavor.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add diced red onion and cook until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef, breaking it apart with a spatula. Season with oregano, cumin, paprika, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes.
