- 2 medium zucchinis, sliced

- 1 small red onion, diced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Start by cooking your rice according to package instructions. Add a pinch of salt or lemon juice for flavor.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add diced red onion and cook until translucent. Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef, breaking it apart with a spatula. Season with oregano, cumin, paprika, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes.
- In a separate pan, heat remaining olive oil. Add sliced zucchini and cook until tender and slightly caramelized. Season with salt and pepper.
- Assemble the bowls starting with rice as the base. Top with ground beef and sautéed zucchini. Garnish with chopped parsley and a squeeze of lemon.
