- 1 lb Honey Garlic Sausage or your favorite sweet Italian sausage
- 2 large sweet potatoes, peeled and cubed
- 3 cloves garlic, minced
- 2 tbsp honey
- 2 tbsp olive oil
- 1 tsp smoked paprika (optional)
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Start by peeling and cubing the sweet potatoes into bite-sized pieces. Mince the garlic finely. Slice the sausages into rounds or halves.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add sweet potatoes, season with salt and pepper, and cook for 10-12 minutes until golden and tender. Remove and set aside.
- In the same skillet, add sausage slices and cook for 5-7 minutes until browned and cooked through, stirring occasionally.
- Lower the heat, add minced garlic to the skillet, cook for 30 seconds until fragrant. Drizzle honey over the mixture and stir to coat everything evenly. Cook for another minute to create a caramelized glaze.
- Return cooked sweet potatoes to the skillet, mixing well. Adjust seasoning with salt, pepper, and smoked paprika if desired. Garnish with chopped parsley before serving.

- You can substitute honey with maple syrup or agave nectar for a different sweetness profile.
- For a keto or paleo version, omit honey or use sugar-free alternatives, and choose compliant sausages.
