- 2 ripe bananas
- 1 1/2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or dried fruits (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add honey or maple syrup, melted coconut oil, and vanilla extract to the mashed bananas. Mix well.
- Stir in rolled oats, cinnamon, salt, and optional nuts or dried fruits until combined and sticky.
- Transfer the mixture to the prepared baking pan and press down firmly to form an even layer.
- Bake for 20-25 minutes or until golden brown on the edges.
- Remove from oven and cool completely before slicing into bars.
Notes
- Try adding shredded coconut, chia seeds, or chocolate chips for extra flavor and nutrients.
- Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
