- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 small red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Brush the salmon fillets with olive oil, season with salt and pepper.
- Place on a baking sheet and bake for 12-15 minutes until cooked through.
- Meanwhile, prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, salt, and pepper in a bowl.
- Remove the salmon from the oven and top with the fresh mango salsa before serving.

- Use ripe mangoes for the sweetest salsa flavor.
- Serve with steamed rice or a side salad for a complete meal.
