- 1 pound boneless, skinless chicken breasts, cut into pieces
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup shredded Swiss or Gruyere cheese
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté onions until caramelized, about 15 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil and cook chicken pieces until browned and cooked through, about 8 minutes. Season with salt, pepper, and thyme.
- In a baking dish, combine cooked chicken, caramelized onions, garlic, orzo, and chicken broth. Stir well.
- Cover with foil and bake for 20 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly and golden.

- Use Gruyere cheese for authentic flavor or mozzarella for a milder taste.
- Ensure onions are cooked slowly for rich caramelization.
