  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded Swiss or Gruyere cheese
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté onions until caramelized, about 15 minutes. Remove and set aside.
  2. In the same skillet, add another tablespoon of olive oil and cook chicken pieces until browned and cooked through, about 8 minutes. Season with salt, pepper, and thyme.
  3. In a baking dish, combine cooked chicken, caramelized onions, garlic, orzo, and chicken broth. Stir well.
  4. Cover with foil and bake for 20 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly and golden.
