- 4 large bell peppers, halved and seeded
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup chopped tomatoes
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Sour cream and lime wedges for serving
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
- Add ground beef and cook until browned. Stir in taco seasoning and cook according to package instructions.
- Stuff each bell pepper half with the cooked meat mixture.
- Place stuffed peppers in a baking dish, top with shredded cheese.
- Bake for 20-25 minutes until peppers are tender and cheese is melted.
- Garnish with chopped tomatoes and cilantro. Serve with sour cream and lime wedges.
