Instructions

  1. Preheat the oven to 400°F (200°C). In a small bowl, mix garlic, oregano, smoked paprika, cumin, lemon zest, salt, and pepper. Rub the spice mixture onto both sides of the chicken. Toss zucchini slices with remaining olive oil, salt, and pepper.
  2. Place the chicken on a parchment-lined baking sheet. Arrange zucchini slices around the chicken evenly. Drizzle more olive oil over the top if desired.
  3. Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C). The zucchini should be tender and caramelized. Garnish with feta cheese and parsley before serving.
