- 1/4 cup Dijon mustard

- 2 cups chicken broth

Instructions
- In a small bowl, whisk together honey, Dijon mustard, and soy sauce if using. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
- Add chicken broth to the same skillet and bring to a boil. Stir in rice, reduce heat to low, cover, and simmer for about 15 minutes until rice is fluffy.
- Return chicken to the skillet. Pour honey mustard sauce over the chicken and rice, stirring gently to coat everything evenly. Let simmer for a few minutes until the sauce thickens slightly.
- Serve the chicken over rice, drizzle with additional sauce if desired, and garnish with fresh herbs.

- You can substitute chicken thighs for a juicier result.
- For a low-carb version, replace rice with cauliflower rice or steamed vegetables.
