Enjoy a quick and flavorful weeknight dinner with Effortless Honey Mustard Chicken & Rice, combining tender chicken breasts, a rich honey mustard sauce, and fluffy rice for a satisfying meal that’s easy to prepare and perfect for busy evenings.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons soy sauce (optional for extra umami)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. In a small bowl, whisk together honey, Dijon mustard, and soy sauce if using. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. Add chicken broth to the same skillet and bring to a boil. Stir in rice, reduce heat to low, cover, and simmer for about 15 minutes until rice is fluffy.
  4. Return chicken to the skillet. Pour honey mustard sauce over the chicken and rice, stirring gently to coat everything evenly. Let simmer for a few minutes until the sauce thickens slightly.
  5. Serve the chicken over rice, drizzle with additional sauce if desired, and garnish with fresh herbs.

Notes

  • You can substitute chicken thighs for a juicier result.
  • For a low-carb version, replace rice with cauliflower rice or steamed vegetables.
  • Ensure not to overcook the chicken to keep it tender.
