Perfect for quick dinners, this recipe offers a perfect blend of sweet, savory, and garlicky flavors, making it your new go-to weeknight favorite.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 large sausage links or patties, preferably Italian or your favorite variety
  • 2 medium sweet potatoes, peeled and diced
  • 3 cloves of garlic, minced
  • 3 tbsp honey
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Start by peeling and dicing the sweet potatoes into bite-sized cubes. Mince the garlic cloves and prepare the sausage links or patties.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
  3. Add another tablespoon of olive oil to the same skillet. Toss in the diced sweet potatoes, season with salt and pepper, and cook for 10-12 minutes until golden and tender, stirring occasionally.
  4. Reduce heat to medium-low. Add minced garlic and cook for 1 minute until fragrant. Drizzle honey over the sweet potatoes and stir to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Slice the cooked sausages into bite-sized pieces and return them to the skillet. Toss everything to combine and heat through. Garnish with fresh herbs if desired and serve hot.

Notes

  • Adjust the sweetness by adding more or less honey according to your taste.
  • You can substitute the sausages with chicken, turkey, or plant-based options for dietary preferences.
  • This dish can be easily doubled for larger gatherings or leftovers.
