Ingredients
Scale
- 1.5 lbs of boneless chicken breasts or sirloin strips
- 3 bell peppers (assorted colors), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 packet fajita seasoning mix (or homemade spice blend)
- 1 lime, juiced
- 2 tbsp olive oil
- Salt and pepper to taste
- Tortillas for serving
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- Start by slicing the bell peppers and onions into thin strips. Prepare your meat and fajita seasoning.
- In a small bowl, mix fajita seasoning, lime juice, olive oil, salt, and pepper. Rub over the meat.
- Place the seasoned meat into the crockpot. Add sliced peppers, onions, and garlic. Optionally, add a splash of chicken broth for extra flavor.
- Cover and cook on low for 4-6 hours until the meat is tender and easy to shred.
- Shred the meat if needed, mix everything, and serve with warm tortillas. Top with your favorite extras like sour cream, cheese, or cilantro.
Notes
- For added flavor, marinate the meat with spices and lime juice for 30 minutes before cooking.
- Adjust spice levels by modifying seasoning amounts or adding hot sauce.
- Use a slow cooker liner for easier cleanup.
