Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 cup ricotta cheese
- 1 cup wild blueberries (fresh or frozen)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a small bowl, combine warm milk and a teaspoon of sugar. Stir in the active dry yeast and let sit for 5–10 minutes until bubbly and frothy.
- In a large mixing bowl, whisk together remaining sugar, flour, and salt. Add eggs, melted butter, activated yeast mixture, ricotta cheese, and vanilla extract. Mix until a soft, slightly sticky dough forms. Knead until smooth and elastic.
- Cover the dough and let it rise in a warm place for about 1 hour until doubled in size.
- Gently fold in the blueberries, ensuring even distribution without crushing.
- Divide the dough into 8–10 portions. Shape each into a ball and place on a parchment-lined baking sheet. Let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Bake for 20–25 minutes until golden brown. Brush tops with milk or beaten egg for a shiny finish.
Notes
- Use fresh or frozen blueberries; if using frozen, rinse and dry thoroughly.
- Ensure the dough is kneaded well for a soft and fluffy texture.
- For extra flavor, sprinkle with powdered sugar before serving.
