  • Total Time: 20 minutes
  • Yield: 4 wraps

Ingredients

Scale
  • 4 large eggs
  • 4 whole wheat or flour tortillas
  • 4 slices of crispy cooked bacon (or turkey bacon)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup fresh spinach or arugula
  • Salt and pepper to taste
  • Optional: hot sauce, avocado slices, or salsa for extra flavor

Instructions

  1. Cook bacon until crispy in a skillet or oven. Whisk eggs with salt and pepper, optionally adding milk or cream.
  2. Gently scramble eggs in a heated non-stick skillet until fluffy and cooked through. Remove from heat.
  3. Warm tortillas in a dry skillet or microwave for 15-20 seconds until soft.
  4. Lay a tortilla flat, then layer with eggs, bacon, cheese, tomatoes, spinach, and green onions. Add hot sauce or avocado if desired.
  5. Fold sides inward and roll tightly from one end to the other.
  6. Slice in half if desired and serve immediately with optional sides like fresh fruit or coffee.

Notes

  • Use crispy bacon for best texture and flavor.
  • Warm tortillas to make wrapping easier and prevent tearing.
  • Store leftovers wrapped in foil or plastic in the refrigerator for up to 2 days. Reheat in microwave or air fryer for best results.
  • You can customize fillings to your preferences, adding ingredients like sautéed mushrooms, bell peppers, or vegan cheese.
