Instructions
- Cook bacon until crispy in a skillet or oven. Whisk eggs with salt and pepper, optionally adding milk or cream.
- Gently scramble eggs in a heated non-stick skillet until fluffy and cooked through. Remove from heat.
- Warm tortillas in a dry skillet or microwave for 15-20 seconds until soft.
- Lay a tortilla flat, then layer with eggs, bacon, cheese, tomatoes, spinach, and green onions. Add hot sauce or avocado if desired.
- Fold sides inward and roll tightly from one end to the other.
