Ingredients
Scale
- 3 ripe bananas, mashed
- 2 cups whole wheat flour
- 1/2 cup vanilla protein powder (choose your favorite flavor)
- 1/4 cup honey or maple syrup
- 1/3 cup melted coconut oil or olive oil
- 3 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
- In a large mixing bowl, mash the bananas until smooth. Add the eggs, honey (or maple syrup), and vanilla extract. Whisk together until well combined.
- In a separate bowl, whisk together the whole wheat flour, protein powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Grease a loaf pan with coconut oil or line with parchment paper. Pour the batter into the pan and smooth the surface with a spatula.
- Preheat your oven to 350°F (175°C). Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Use ripe bananas for optimal sweetness and flavor.
- Add nuts or chocolate chips for extra texture and flavor.
- Store leftovers in an airtight container at room temperature for up to 2 days, refrigerate for up to a week, or freeze slices individually for longer storage.
