Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the cinnamon swirl:
  • 1/4 cup light brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside. Mash the bananas until smooth.
  2. In a large bowl, whisk together the melted butter, eggs, and vanilla. Add mashed bananas and mix well.
  3. Gradually incorporate the dry ingredients: flour, baking soda, salt, and sugar, stirring until just combined.
  4. In a small bowl, mix the brown sugar and cinnamon for the swirl.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over it.
  6. Add the remaining batter and sprinkle with the rest of the cinnamon sugar.
  7. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Store leftover banana bread in an airtight container or wrapped tightly in plastic wrap. It keeps fresh at room temperature for up to 3 days or refrigerated for up to a week.
  • For longer storage, freeze slices individually in freezer-safe bags or containers. Reheat briefly in the microwave before serving.
  • Feel free to add nuts, chocolate chips, or dried fruit for variations.
