- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the cinnamon swirl:
- 1/4 cup light brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside. Mash the bananas until smooth.
- In a large bowl, whisk together the melted butter, eggs, and vanilla. Add mashed bananas and mix well.
- Gradually incorporate the dry ingredients: flour, baking soda, salt, and sugar, stirring until just combined.
- In a small bowl, mix the brown sugar and cinnamon for the swirl.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over it.
- Add the remaining batter and sprinkle with the rest of the cinnamon sugar.
- Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Store leftover banana bread in an airtight container or wrapped tightly in plastic wrap. It keeps fresh at room temperature for up to 3 days or refrigerated for up to a week.
- For longer storage, freeze slices individually in freezer-safe bags or containers. Reheat briefly in the microwave before serving.
- Feel free to add nuts, chocolate chips, or dried fruit for variations.
