Instructions
- Preheat your oven to 400°F (200°C). Wash and dice the potatoes into bite-sized pieces. Slice the smoked sausage into rounds. In a large mixing bowl, combine ranch dressing, garlic powder, paprika, salt, and pepper to make the sauce.
- Heat olive oil in a large skillet over medium heat. Sauté sausage slices until browned, about 5 minutes. Add diced potatoes and cook for 8-10 minutes until they start to soften.
- Transfer sausage and potatoes to a baking dish. Pour the ranch mixture over, ensuring even coating. Top generously with shredded cheddar and mozzarella cheeses.
- Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly. For extra browning, broil for 2-3 minutes. Garnish with chopped parsley if desired and serve hot.
