Instructions
- Peel and slice the fresh peaches, then preheat your oven to 350°F (175°C).
- Cream together the softened butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Pour the batter into a greased 9-inch cake pan or springform pan.
- Arrange peach slices evenly on top and gently press them into the batter. Sprinkle with additional brown sugar.
- Bake for 40-45 minutes until a toothpick inserted in the center comes out clean. Cover with foil if over-browning.
