Ingredients

  • 1 cup almond butter or peanut butter (preferably natural)
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free rolled oats
  • 1/4 cup coconut flour
  • 1/4 cup vegan chocolate chips or chunks
  • Optional toppings: shredded coconut, chopped nuts, or dried fruits

Instructions

  1. In a large mixing bowl, combine the almond butter (or preferred nut butter), maple syrup, and vanilla extract. Stir until completely smooth and well blended.
  2. Add the gluten-free rolled oats and coconut flour to the wet mixture. Mix thoroughly until all ingredients are well incorporated.
  3. Fold in the vegan chocolate chips and optional toppings if desired.
  4. Press the mixture firmly into a parchment-lined baking dish or silicone mold. Use the back of a spatula to flatten evenly. Place in the freezer for at least 30 minutes to set.
  5. Remove from the freezer, cut into bars or squares, and enjoy immediately or store for later.
