- 1 cup almond butter or peanut butter (preferably natural)
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free rolled oats
- 1/4 cup coconut flour
- 1/4 cup vegan chocolate chips or chunks
- Optional toppings: shredded coconut, chopped nuts, or dried fruits
Instructions
- In a large mixing bowl, combine the almond butter (or preferred nut butter), maple syrup, and vanilla extract. Stir until completely smooth and well blended.
- Add the gluten-free rolled oats and coconut flour to the wet mixture. Mix thoroughly until all ingredients are well incorporated.
- Fold in the vegan chocolate chips and optional toppings if desired.
- Press the mixture firmly into a parchment-lined baking dish or silicone mold. Use the back of a spatula to flatten evenly. Place in the freezer for at least 30 minutes to set.
- Remove from the freezer, cut into bars or squares, and enjoy immediately or store for later.
Notes
- Store these bars in an airtight container in the refrigerator for up to one week.
- For longer storage, keep them in the freezer for a chilled snack anytime.
- Enhance flavor by drizzling melted vegan chocolate or sprinkling additional toppings on top before setting.
