  • Total Time: 2 hours 10 minutes
  • Yield: 12 servings

Ingredients

Scale
  • 1 cup fresh blueberries
  • 2 cups Greek yogurt (full-fat or low-fat based on preference)
  • 2 tbsp honey or maple syrup (optional, for sweetness)
  • 1 tsp vanilla extract
  • Mini muffin liners or silicone molds
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Thoroughly wash the fresh blueberries. In a blender, combine blueberries with honey or maple syrup if desired, and blend until smooth. Set aside a few whole blueberries for garnish.
  2. In a bowl, mix Greek yogurt with vanilla extract and remaining honey or syrup until well combined. This creates the base for your swirl yogurt.
  3. Gently fold the blueberry puree into the yogurt mixture, creating swirls without fully mixing to achieve a marbled effect.
  4. Line muffin tins or silicone molds with liners or lightly grease them. Spoon yogurt mixture into each mold, then add a dollop of remaining blueberry puree on top. Use a toothpick or skewer to swirl layers together.
  5. Freeze for at least 2 hours until fully solidified, allowing the bites to become icy and refreshing.

Notes

  • If using frozen blueberries, thaw and drain excess water before blending.
  • To make it dairy-free, substitute Greek yogurt with coconut or almond yogurt.
  • Add chopped nuts or granola on top before freezing for extra texture.
  • <li Adjust sweetness in the yogurt mixture according to taste preferences.
