Ingredients
Scale
- 1 cup fresh blueberries
- 2 cups Greek yogurt (full-fat or low-fat based on preference)
- 2 tbsp honey or maple syrup (optional, for sweetness)
- 1 tsp vanilla extract
- Mini muffin liners or silicone molds
- Fresh mint leaves (for garnish, optional)
Instructions
- Thoroughly wash the fresh blueberries. In a blender, combine blueberries with honey or maple syrup if desired, and blend until smooth. Set aside a few whole blueberries for garnish.
- In a bowl, mix Greek yogurt with vanilla extract and remaining honey or syrup until well combined. This creates the base for your swirl yogurt.
- Gently fold the blueberry puree into the yogurt mixture, creating swirls without fully mixing to achieve a marbled effect.
- Line muffin tins or silicone molds with liners or lightly grease them. Spoon yogurt mixture into each mold, then add a dollop of remaining blueberry puree on top. Use a toothpick or skewer to swirl layers together.
- Freeze for at least 2 hours until fully solidified, allowing the bites to become icy and refreshing.
Notes
- If using frozen blueberries, thaw and drain excess water before blending.
- To make it dairy-free, substitute Greek yogurt with coconut or almond yogurt.
- Add chopped nuts or granola on top before freezing for extra texture. <li Adjust sweetness in the yogurt mixture according to taste preferences.
