- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups marinara sauce
- 4 cups vegetable broth
- 1 package (9 oz) cheese tortellini
- 1 teaspoon dried oregano
- 1 teaspoon basil
- Salt and pepper to taste
- Fresh basil and grated Parmesan for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add marinara sauce and vegetable broth, bringing to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in dried oregano, basil, salt, and pepper.
- Add tortellini and cook until tender, about 5 minutes.
- Serve hot, garnished with fresh basil and Parmesan.
Notes
- Feel free to add spinach or other greens for extra nutrition.
